  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon Cajun seasoning (use your favorite blend)
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 4 ounces cream cheese, cut into cubes
  • 1/2 cup grated Parmesan cheese
  • 8 ounces linguine or fettuccine pasta
  • 1/2 cup chopped green onions, for garnish

Instructions

  1. Cook the pasta according to package directions until al dente. Reserve about 1/2 cup of the starchy pasta water before draining. Set the drained pasta aside.
  2. While the pasta cooks, season the chicken pieces evenly with salt, pepper, and Cajun seasoning.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
  4. Reduce the heat to medium. Pour the chicken broth into the skillet and scrape up any browned bits from the bottom. Let it simmer for 1 minute.
  5. Stir in the heavy cream and bring the mixture to a gentle simmer. Add the cream cheese cubes and whisk until the sauce is smooth and melted.
  6. Stir in the grated Parmesan cheese until the sauce is fully incorporated and creamy. Taste the sauce and add more Cajun seasoning if you prefer more spice.
  7. Return the cooked chicken to the skillet. Add the cooked pasta to the sauce. Toss everything together until the pasta and chicken are evenly coated. If the sauce seems too thick, add a splash or two of the reserved pasta water until you reach your desired consistency.
  8. Serve immediately, garnished with fresh green onions.
