Make this rich and creamy Crack Chicken Gnocchi for an ultimate comfort dinner. This easy one-pan meal combines tender chicken, pillowy gnocchi, bacon, and a savory ranch cream sauce, perfect for busy weeknights.

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 ounces bacon, chopped
  • 1 (16 ounce) package potato gnocchi
  • 1 cup chicken broth
  • 8 ounces cream cheese, cubed
  • 1 packet (1 ounce) dry ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Parmesan cheese
  • 1/4 cup heavy cream (optional, for extra richness)
  • 2 cups fresh spinach

Instructions

  1. Cook the chopped bacon in a large skillet over medium heat until crispy. Remove bacon with a slotted spoon and set aside, leaving about 1 tablespoon of bacon grease in the skillet.
  2. Add the chicken pieces to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside with the bacon.
  3. Add the gnocchi and chicken broth to the skillet. Bring to a simmer and cook according to package directions, usually about 5 minutes, until the gnocchi is tender.
  4. Reduce heat to low. Stir in the cream cheese cubes, ranch seasoning mix, and heavy cream (if using). Stir constantly until the cream cheese melts and the sauce is smooth.
  5. Stir in the shredded cheddar cheese and Parmesan cheese until fully melted and the sauce is creamy.
  6. Return the cooked chicken and most of the crispy bacon to the skillet. Stir to coat everything in the sauce.
  7. Stir in the fresh spinach until it wilts into the sauce.
  8. Serve immediately, garnished with the remaining crispy bacon.

Notes

  • For a quicker prep, use pre-cooked rotisserie chicken instead of raw chicken breasts. Add the shredded chicken when you add the cheese.
  • If you prefer a thicker sauce, reduce the amount of chicken broth slightly or let the sauce simmer uncovered for an extra minute before adding the cheese.
  • This recipe works well with frozen gnocchi if you allow a few extra minutes for simmering in the broth.
