Pat the beef tips dry and season lightly with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Brown the beef tips in batches until they have color on all sides. Do not overcrowd the pan. Transfer the browned beef to the slow cooker.
Add the chopped onion to the same skillet and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
Scrape the onions and garlic into the slow cooker over the beef.
