Easy Crockpot Beef Tips with Rich Savory Gravy

Make melt-in-your-mouth tender beef tips in your slow cooker with a rich, savory gravy. This set-it-and-forget-it recipe is perfect for a hearty, comforting weeknight dinner served over egg noodles or mashed potatoes.

  • 2 pounds beef stew meat (or sirloin tips), cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 (10.5 ounce) can condensed cream of celery soup
  • 1 cup beef broth
  • 1 packet (1 ounce) dry onion soup mix (for deep flavor)
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 2 tablespoons cornstarch mixed with 3 tablespoons cold water (for thickening)
  • 1 pound wide egg noodles or 4 servings mashed potatoes (for serving)

Instructions

  1. Pat the beef tips dry and season lightly with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Brown the beef tips in batches until they have color on all sides. Do not overcrowd the pan. Transfer the browned beef to the slow cooker.
  3. Add the chopped onion to the same skillet and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Scrape the onions and garlic into the slow cooker over the beef.
  5. Add the cream of mushroom soup, cream of celery soup, beef broth, dry onion soup mix, Worcestershire sauce, and thyme to the slow cooker. Stir everything together until well combined.
  6. Cover the slow cooker and cook on LOW for 7 to 8 hours or on HIGH for 3 to 4 hours, until the beef is very tender.
  7. About 30 minutes before serving, stir the cornstarch and cold water mixture into the slow cooker to create a thick, savory gravy. Stir well.
  8. Continue cooking on HIGH for the final 30 minutes, or until the gravy has thickened to your liking. Taste and adjust salt and pepper if needed.
  9. Serve your tender crockpot beef tips and gravy immediately over hot, creamy egg noodles or mashed potatoes for a family favorite slow cooker meal.

Notes

  • For extra rich flavor, you can substitute one can of soup with a can of condensed beef broth soup.
  • If you prefer serving over rice, skip the cornstarch slurry and simply let the natural juices thicken slightly during the last 30 minutes of cooking.
  • This recipe is great for make ahead crockpot dinners; the flavors deepen overnight in the refrigerator.
