Easy Ground Beef Dorito Casserole

A simple, hearty, and cheesy baked casserole featuring ground beef and crushed Doritos, perfect for a quick weeknight dinner.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 (10 ounce) can Ro-Tel diced tomatoes and green chilies, undrained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup water
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1 cup shredded cheddar cheese, divided
  • 6 cups Nacho Cheese Doritos, lightly crushed
  • 1/2 cup sour cream (for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Cook the ground beef and onion in a large skillet over medium heat until the beef is browned and the onion is soft. Drain off any excess grease.
  3. Stir the cream of mushroom soup, Ro-Tel, black beans, water, chili powder, and cumin into the skillet with the beef mixture. Cook until heated through, about 5 minutes.
  4. Remove the skillet from the heat. Stir in 3/4 cup of the shredded cheddar cheese.
  5. Fold in 5 cups of the crushed Doritos into the beef mixture.
  6. Spread the mixture evenly into the prepared baking dish.
  7. Bake for 20 minutes, or until the casserole is bubbly.
  8. Remove from the oven. Sprinkle the remaining 1/4 cup of cheese over the top.
  9. Bake for an additional 5 minutes, or until the cheese is melted.
  10. Let the casserole rest for 5 minutes before serving. Top each serving with a dollop of sour cream and the remaining 1 cup of crushed Doritos.

Notes

  • For a spicier version, use Spicy Nacho Cheese Doritos or add a dash of hot sauce to the beef mixture.
  • You can substitute cream of chicken soup for cream of mushroom soup if preferred.
  • This recipe works well as a make ahead casserole; assemble it completely, cover, and refrigerate up to 24 hours before baking. Add 10 minutes to the initial bake time if baking from cold.
