Make this easy, homemade Mexican Pizza that tastes just like the Taco Bell classic. It uses crispy tortillas layered with seasoned beef, refried beans, and cheese, ready in under 30 minutes for a perfect weeknight dinner.

  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 2/3 cup water
  • 6 large corn tortillas
  • 1 (16 ounce) can refried beans, warmed
  • 1 cup enchilada sauce
  • 2 cups shredded Mexican cheese blend
  • 1/2 cup diced tomatoes (for topping)
  • 1/4 cup sliced black olives (for topping)
  • 2 tablespoons sliced green onions (for topping)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly spray a baking sheet with cooking spray.
  2. Cook the ground beef in a skillet over medium heat until browned. Drain off any excess fat.
  3. Stir in the taco seasoning and water. Simmer for 5 minutes until the liquid reduces slightly. Set the seasoned beef aside.
  4. Place the corn tortillas directly on the prepared baking sheet. Bake for 5 to 7 minutes, flipping halfway through, until they are crisp. Watch them closely to prevent burning.
  5. To assemble the first pizza layer, place one crispy tortilla on a clean surface. Spread half of the warmed refried beans evenly over the tortilla.
  6. Top the beans with half of the seasoned ground beef.
  7. Spoon half of the enchilada sauce over the beef layer. Sprinkle with half of the shredded cheese.
  8. Place the second crispy tortilla on top of the cheese layer. Repeat the layering process: remaining refried beans, remaining beef, remaining enchilada sauce, and remaining cheese.
  9. Bake for 8 to 10 minutes, or until the cheese is fully melted and bubbly.
  10. Remove from the oven. Top immediately with diced tomatoes, sliced olives, and green onions. Slice into wedges and serve hot.

Notes

  • For extra crispy tortillas, you can air fry them at 375 degrees Fahrenheit for about 4 minutes, turning once.
  • If you prefer a spicier flavor, add a pinch of cayenne pepper to your ground beef mixture.
  • This recipe is great for game day snacks or a quick Taco Tuesday meal.
