This simple Rotel Dip recipe uses only three ingredients for a creamy, cheesy appetizer perfect for parties or game day snacking. You can make this hot cheese dip quickly on the stovetop.

  • 1 (10 ounce) can Rotel Original Diced Tomatoes and Green Chilies, undrained
  • 1 (16 ounce) package Velveeta cheese, cubed
  • 1 (8 ounce) package cream cheese, softened

Instructions

  1. Combine the Rotel tomatoes and green chilies, cubed Velveeta cheese, and softened cream cheese in a medium saucepan.
  2. Heat the mixture over medium-low heat. Stir constantly until all the cheese is completely melted and the dip is smooth and creamy. Do not let the mixture boil.
  3. Once smooth, remove the dip from the heat.
  4. Transfer the dip to a slow cooker if you plan to keep it warm for a party, or serve immediately with tortilla chips.

Notes

  • For a heartier dip, brown 1 pound of ground beef or sausage and drain the fat before adding it to the cheese mixture in step 1.
  • If using a slow cooker, set it to the ‘Warm’ setting after the cheese has melted on the stovetop.
  • Serve this crowd pleasing dip with sturdy tortilla chips, crackers, or vegetable sticks.
