  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 cup chicken broth
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 8 ounces penne or rigatoni pasta
  • 1/4 cup fresh basil, chopped
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Season the chicken pieces with Italian seasoning, salt, and pepper.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  3. Reduce heat to medium. Add minced garlic and chopped sun-dried tomatoes to the skillet. Cook for 1 minute until fragrant.
  4. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Bring to a simmer.
  5. Stir in the heavy cream and bring the sauce back to a gentle simmer.
  6. Add the dry pasta to the skillet. Stir well to coat. Cover the skillet and cook according to the pasta package directions, stirring occasionally to prevent sticking, until the pasta is al dente (usually 10-12 minutes). If the sauce thickens too much, add a splash more broth or water.
  7. Stir in the grated Parmesan cheese and red pepper flakes (if using). Mix until the cheese is melted and the sauce is smooth.
  8. Return the cooked chicken to the skillet and stir to coat. Heat through for 1 minute.
  9. Remove from heat. Stir in the fresh basil. Serve immediately with extra Parmesan cheese on top.

Notes

  • For a richer flavor, use dry white wine to deglaze the pan after cooking the garlic before adding the broth.
  • If you do not want to cook the pasta in the sauce, cook 8 ounces of pasta separately according to package directions, drain, and then add it to the finished sauce and chicken mixture.
  • You can substitute heavy cream with half-and-half for a slightly lighter sauce, but the texture will be less rich.
