Learn the simple, foolproof method for baking sweet potatoes in the oven. This technique guarantees a tender, fluffy interior and a slightly crisp skin, making it the best way to cook sweet potatoes for a healthy dinner side or meal prep.

Ingredients

Scale
  • 4 medium sweet potatoes (about 810 ounces each)
  • 1 teaspoon coarse salt
  • 1 tablespoon olive oil (optional, for crispier skin)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). This temperature helps achieve a fluffy sweet potato inside.
  2. Scrub the sweet potatoes thoroughly under running water to remove any dirt. Pat them completely dry with a paper towel.
  3. Prick each sweet potato several times deeply all over with a fork or sharp knife. This allows steam to escape and prevents bursting.
  4. If you want a crispier skin, lightly rub the potatoes with olive oil. Sprinkle evenly with coarse salt.
  5. Place the prepared sweet potatoes directly on the middle oven rack. Do not use foil, as foil traps steam and results in a softer skin.
  6. Bake for 45 to 60 minutes. The exact oven baked sweet potato time depends on the size of your potatoes. Start checking at 45 minutes.
  7. The potato is done when you can easily pierce the center with a fork and the skin yields slightly when squeezed. The inside should be tender.
  8. Remove from the oven. Let them cool for 5 minutes before slicing open lengthwise. Fluff the inside flesh with a fork and serve immediately with your favorite toppings.

Notes

  • For meal prep, bake the potatoes, let them cool, and store them whole in the refrigerator for up to 4 days. Reheat slices or halves in the microwave or oven.
  • To achieve a caramelized skin, ensure the potatoes are completely dry before seasoning and baking directly on the rack.
  • Pair this healthy baked vegetable with grilled chicken or pork chops for a complete healthy dinner side idea.
  • If you prefer a sweeter flavor, add a dash of cinnamon to the salt before rubbing it on the skin.
