Make these simple pizza muffins for a kid-friendly snack, party food, or easy freezer lunchbox addition. They capture all the flavor of pepperoni pizza in a convenient, bite-size form.

  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1/2 cup pizza sauce
  • 1/2 cup mini pepperoni, chopped

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, baking powder, salt, and pepper.
  3. Stir in the Parmesan cheese and mozzarella cheese.
  4. In a separate bowl, whisk together the milk, vegetable oil, and egg.
  5. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
  6. Gently fold in the chopped mini pepperoni.
  7. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  8. Top each muffin with about 1 teaspoon of pizza sauce. You can swirl it slightly with a toothpick if desired.
  9. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the pizza muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • These mini pizza muffins freeze well. Cool them completely, then place them in a freezer-safe bag. Thaw overnight or reheat from frozen in the microwave for 30 to 60 seconds.
  • For a different flavor, substitute the pepperoni with cooked, crumbled sausage or finely chopped bell peppers.
  • You can add a small sprinkle of dried oregano over the sauce before baking for extra flavor.
