One-Pot Creamy Italian Sausage Gnocchi Soup

This is the comforting, hearty soup your family needs on a busy weeknight. You get savory Italian sausage, tender gnocchi, and a rich, creamy broth, all made in one pot in under 30 minutes.

  • 1 pound Italian sausage, casings removed
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (16 ounce) package potato gnocchi
  • 1/2 cup heavy cream
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese (for serving)

Instructions

  1. Place a large pot or Dutch oven over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Pour in the chicken broth and diced tomatoes (with their liquid). Add the Italian seasoning, salt, and pepper. Bring the mixture to a simmer.
  5. Add the package of potato gnocchi to the simmering broth. Cook according to package directions, usually about 3-5 minutes, until the gnocchi float to the surface.
  6. Reduce the heat to low. Stir in the heavy cream until the broth is fully incorporated and creamy. Do not let the soup boil after adding the cream.
  7. Stir in the fresh spinach until it wilts completely into the soup.
  8. Taste and adjust salt and pepper if needed. Serve immediately with grated Parmesan cheese on top.

Notes

  • For a heartier soup, substitute half of the chicken broth with vegetable broth.
  • If you prefer a less rich soup, use half-and-half instead of heavy cream.
  • You can use mild or hot Italian sausage based on your preference for spice.
  • Add 1 cup of chopped kale along with the spinach for extra greens.
