Make this incredibly tender and savory Slow Cooker Garlic Parmesan Chicken with minimal effort. This set-it-and-forget-it crock pot chicken creates a rich, cheesy sauce perfect for weeknight dinners or feeding a crowd.

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 tablespoons cornstarch (for thickening, optional)
  • 2 tablespoons cold water (for slurry, optional)

Instructions

  1. Place the chicken breasts or thighs into the basin of your slow cooker.
  2. In a separate bowl, whisk together the cream of chicken soup, chicken broth, heavy cream, Parmesan cheese, minced garlic, Italian seasoning, pepper, and salt until smooth.
  3. Pour the sauce mixture evenly over the chicken in the slow cooker.
  4. Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the chicken is fully cooked and easily shreds.
  5. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the sauce. Stir to coat.
  6. If you prefer a thicker sauce, mix the cornstarch and cold water in a small bowl to create a slurry. Stir the slurry into the sauce in the slow cooker. Cook on HIGH for 15 minutes, or until the sauce thickens.
  7. Serve hot over pasta, rice, or alongside roasted broccoli for a complete meal.

Notes

  • For a low carb crock pot chicken option, skip serving over pasta and instead serve this creamy garlic parmesan chicken over steamed spinach or alongside cauliflower rice.
  • This recipe works well for potlucks; simply keep it warm on the ‘Keep Warm’ setting.
  • If using frozen chicken, add 1 hour to the low setting cooking time.
