  • 3 tablespoons meringue powder
  • 6 tablespoons warm water
  • 1 teaspoon clear vanilla extract
  • Optional: Gel food coloring

Instructions

  1. In a large bowl, combine the sifted powdered sugar and meringue powder. Whisk them together thoroughly to remove any lumps.
  2. Add the warm water and clear vanilla extract to the dry ingredients.
  3. Using an electric mixer on low speed, mix the ingredients until just combined. Scrape down the sides of the bowl.
  4. Increase the mixer speed to medium-high and beat for 5 to 7 minutes until the icing is very smooth and holds stiff peaks. This whipping action incorporates air, which helps the icing dry hard.
  5. To create ‘outline’ consistency (for piping borders), add water 1 teaspoon at a time until the icing holds a soft peak but falls back into the bowl slowly.
  6. To create ‘flood’ consistency (for filling in areas), add water 1 teaspoon at a time until the icing flows off the spatula in a continuous ribbon, and you can draw a line through it that disappears in about 10 seconds.
  7. Divide the icing into separate bowls if you plan to use multiple colors. Add gel food coloring sparingly and mix until the color is uniform.
  8. Transfer the icing to piping bags fitted with small tips (for outlining) or couplers (for flooding).
  9. Outline your sugar cookies first. Let the outline dry for at least 30 minutes before flooding the center.
  10. Flood the outlined area, gently shaking the cookie to smooth the surface.
  11. Allow the cookies to dry completely at room temperature, uncovered, for 6 to 12 hours, depending on humidity, until the icing is completely hard to the touch.

  • For a recipe without corn syrup, use this meringue powder-based recipe; it sets firm without it.
  • If your icing is too thick, add water a few drops at a time. If it is too thin, add a tablespoon of sifted powdered sugar.
  • To achieve a professional, glossy finish, avoid over-mixing once you reach the desired flood consistency.
  • Store unused icing in an airtight container at room temperature for up to 3 days; do not refrigerate, as this introduces moisture.
