2 medium zucchini
1 large egg, lightly beaten
1/2 cup grated Parmesan cheese
1/4 cup almond flour
1/2 teaspoon dried oregano
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup pizza sauce or marinara sauce
1/2 cup shredded mozzarella cheese
2 tablespoons mini pepperoni slices (optional)
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Wash the zucchini and slice them into rounds about 1/4 to 1/2 inch thick. You should get about 20 to 24 slices.
Place the zucchini slices on a clean kitchen towel or several layers of paper towels. Sprinkle them lightly with salt and let them sit for 10 minutes. This draws out excess moisture.
Gently press the zucchini slices to remove as much liquid as possible. Discard the liquid. This step is key for crispy bites.
In a medium bowl, combine the beaten egg, Parmesan cheese, almond flour, oregano, garlic powder, salt, and pepper. Mix well.
Add the dried zucchini slices to the bowl and toss gently until all pieces are coated with the cheese mixture.
Arrange the coated zucchini slices in a single layer on the prepared baking sheet.
Bake for 10 to 12 minutes, or until the edges start to look firm and slightly golden.
Remove the baking sheet from the oven. Top each zucchini round with about 1/2 teaspoon of pizza sauce, a sprinkle of mozzarella cheese, and a piece of pepperoni, if using.
Return the bites to the oven and bake for another 5 to 7 minutes, or until the cheese is melted and bubbly.
Serve immediately as a guilt-free pizza snack.
Notes
For Air Fryer Zucchini Bites: Preheat the air fryer to 375°F (190°C). Arrange the coated zucchini slices in a single layer in the basket (work in batches). Air fry for 8 minutes. Top with sauce and cheese, then air fry for an additional 2 to 3 minutes until the cheese melts.
If you skip the pepperoni, these remain a great vegetarian pizza snack.
Do not skip squeezing the water out of the zucchini; this prevents soggy bites.
